2/3 cup oil
1 cup white sugar
1 egg
1/4 cup blackstrap molasses
2 cups plus 2 Tablespoons flour
2 teaspoons baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon

Heat oven to 350. Combine oil, sugar, egg, and molasses and stir well. Add flour, baking soda, ginger and cinnamon. Stir until mixed.
Cover cookie sheets with parchment paper. Using a cookie scoop, scoop dough into walnut sized balls and coat in reserved sugar. Press lightly onto cookie sheet. Bake 8-10 minutes until set and done. Do NOT over bake or cookies will be hard.
